Chicken Pesto Stuffed Sweet Potatoes

 

Prepare your favorite pesto recipe or buy pre-made

3 cups cooked shredded chicken breast (rotisserie chicken works great!)

6 medium sweet potatoes

Olive oil and salt for baking

Bake Potatoes: Preheat your oven to 400°. Coat sweet potatoes with a bit of olive oil and sprinkle sea salt all over. Place on a parchment lined baking sheet and bake 60-70 minutes until soft.

Combine shredded chicken and pesto sauce in a skillet over low heat until warmed through.

Once potatoes are ready, cut each one lengthwise and top generously with chicken pesto mixture and serve.

Yield: 6 servings
