2 cucumbers, peeled, halved lengthwise, seeded, thinly sliced (about 4 cups)
2 cups fresh blueberries
Salt and pepper to taste
½ cup White Balsamic Vinaigrette (see recipe below)
3 Tbsp thinly sliced fresh mint leaves
1 cup crumbled plain Feta cheese
Combine cucumbers and blueberries in a large bowl. Season with salt and pepper.
Add vinaigrette, mint and feta; toss gently to combine.
White Balsamic Vinaigrette
½ cup extra virgin olive oil
¼ cup white balsamic vinegar
1 Tbsp Dijon mustard
1 tsp sugar
½ tsp salt
½ tsp pepper
Combine the vinegar, mustard, sugar, salt and pepper. Whisk with a fork to combine just slightly. Slowly whisk in the oil until fully combined and thickened, adjust seasonings to taste.
